Easy Family Meals On A Budget

When you’re on a tight budget, it can be difficult to come up with ideas for what to cook your family. Luckily, there are loads of delicious, nutritious meals that don’t break the bank to cook, and are easy to whip up quickly if you’re stressed and overworked. Don’t resort to the ready meals just yet; try some of these out first. Your kids and your wallet will love them.


Chicken pasta bake (or tuna pasta bake)

This recipe can be easily made with your choice of protein, but it’s especially handy for using up leftover chicken. Mix up cooked pasta, veggies like peas and sweetcorn, some white sauce and cooked chicken (or tuna, or mince, if you prefer), and stick it all in the oven at about 180 for around half an hour. Add some extra cheese on top for an added gooey yum factor that the kids will love, and don’t forget lots of seasoning.


Fish pie

This is an easy dish that always goes down well. Bake some cod or haddock in the oven, while you whip up some cheese sauce and cook some veg; broccoli, leeks and spinach all work well. Boil potatoes, drain and slice, then flake the baked fish into an oven dish, adding the veggies on top and then the sauce. Add the potatoes on top with some extra cheese grated on, then bake in the oven for around 15 minutes. This is a tasty and healthy meal that should please even fussy toddlers.


Vegetable and salmon pasta

Packed with omega-3 for your kids’ developing brains and ridiculously quick and easy, this is one of our favourites. Make a quick white sauce from flour, butter and milk, then either poach some salmon or get out of a tin if you’re in a hurry, and cook up some frozen peas, tinned sweetcorn or whatever veg you have on hand. Mix up with cooked pasta and add some seasoning and you’ve got a nutritious, yummy meal for the whole family.
